Strawberry Brownies are soft, chewy dessert bars bursting with fresh strawberry flavor and finished with a sweet strawberry glaze. Their vibrant pink color and buttery texture make them perfect for holidays, parties, or an everyday treat.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup fresh strawberry puree
  • 2 tbsp freeze-dried strawberry powder (optional)
  • 1 1/2 cups powdered sugar
  • 23 tbsp milk or heavy cream
  • 1/2 cup fresh strawberries, chopped (optional)
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
  2. Whisk together the all-purpose flour, baking powder, and salt in a medium bowl.
  3. In a large bowl, mix the melted butter and granulated sugar until well combined.
  4. Beat in the eggs one at a time, then stir in the vanilla extract and strawberry puree.
  5. Gradually fold the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chopped fresh strawberries or white chocolate chips if using.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 28–32 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out with a few moist crumbs.
  9. Allow the brownies to cool completely in the pan.
  10. Prepare the glaze by mixing the powdered sugar with a small amount of strawberry puree or milk until smooth.
  11. Spread the glaze evenly over the cooled brownies and let it set before slicing into 16 squares.

Notes

  • Frozen strawberries can be used if thawed and well drained before pureeing.
  • Avoid overmixing the batter to keep the brownies soft and chewy.
  • Add lemon zest or almond extract for extra flavor.
  • Sprinkle freeze-dried strawberry pieces or drizzle melted white chocolate over the glaze for an elegant finish.
  • Store in an airtight container at room temperature for up to 3 days, refrigerate for up to 1 week, or freeze for up to 3 months.
