Sticky honey lemon chicken features tender golden chicken coated in a glossy sweet, tangy, and savory glaze made with honey, fresh lemon, garlic, ginger, and soy sauce. Ready in about 30 minutes, it is an easy flavor-packed dinner for serving with rice, noodles, or vegetables.

Ingredients

  • Boneless, skinless chicken thighs or chicken breasts
  • Cornstarch, for coating the chicken
  • Salt
  • Freshly ground black pepper
  • Neutral cooking oil
  • Honey
  • Fresh lemon juice
  • Fresh lemon zest
  • Soy sauce
  • Garlic, minced
  • Fresh ginger, grated
  • Chicken stock or water
  • Cornstarch, for the sauce
  • Red pepper flakes, optional
  • Green onions, thinly sliced
  • Sesame seeds
  • Lemon slices or wedges
  • Steamed rice, optional

Instructions

  1. Cut the chicken into evenly sized bite-sized pieces and pat them dry. Season lightly with salt and black pepper, then toss with cornstarch until thinly and evenly coated.
  2. Heat the neutral cooking oil in a large skillet over medium-high heat.
  3. Add the chicken in a single layer without overcrowding the skillet. Cook, turning occasionally, until golden on the outside and cooked through. Work in batches if necessary and transfer the cooked chicken to a plate.
  4. While the chicken cooks, whisk together the honey, fresh lemon juice, lemon zest, soy sauce, minced garlic, grated ginger, chicken stock or water, cornstarch, and optional red pepper flakes.
  5. Reduce the skillet to medium heat and pour in the honey lemon sauce. Stir continuously as the mixture comes to a simmer and begins to thicken.
  6. Return the chicken to the skillet and toss thoroughly until every piece is coated in the sauce.
  7. Continue cooking for a few minutes until the sauce reduces into a thick, glossy, and sticky glaze. Make sure the chicken reaches an internal temperature of 165°F (74°C).
  8. Remove from the heat and garnish with sliced green onions, sesame seeds, and additional lemon zest if desired.
  9. Serve immediately with lemon wedges and optional steamed rice, noodles, or vegetables.

Notes

  • Chicken thighs stay especially juicy, while chicken breasts provide a leaner option.
  • Avoid overcrowding the skillet so the chicken browns instead of steaming.
  • For a spicier version, add extra red pepper flakes, sliced fresh chili, or chili sauce to the glaze.
  • For crispier chicken, use a slightly thicker cornstarch coating and shallow-fry the pieces before adding the sauce.
  • Broccoli, bell peppers, snow peas, green beans, or zucchini can be stir-fried separately and added to the chicken.
  • Use extra lemon zest rather than excessive lemon juice for stronger citrus flavor without making the sauce too acidic.
  • If the sauce tastes too sour, balance it with a little additional honey.
  • Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
  • Reheat gently in a skillet with a small splash of water to loosen the refrigerated sauce and restore its glossy consistency.
  • Cooked honey lemon chicken can be frozen for up to 2 months, although the coating has its best texture when freshly prepared.
