Ingredients

  • 4 cups shredded lettuce or cabbage
  • 1 cup cooked rice noodles

  • 1 cup bean sprouts
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 2 green onions, sliced
  • Chopped peanuts for garnish
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon freshly grated ginger
  • 1 clove garlic, minced
  • 1 teaspoon chili garlic sauce or sriracha

Instructions

  1. Cook the rice noodles according to package instructions, then rinse with cold water and drain well.
  2. In a large bowl, combine the lettuce or cabbage, rice noodles, carrots, cucumber, bell pepper, bean sprouts, cilantro, mint, and green onions.
