Ingredients
2 medium zucchini, spiralized
2 large carrots, spiralized
1 red bell pepper, thinly sliced
1/4 cup thinly sliced red onion
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh cilantro
2 tablespoons toasted sunflower seeds or sliced almonds
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup
1 small garlic clove, minced
Salt, to taste
Freshly ground black pepper, to taste
Instructions
Place the spiralized zucchini and carrots into a large mixing bowl.
Add the sliced red bell pepper, red onion, parsley, and cilantro.
Whisk together the olive oil, lemon juice, Dijon mustard, honey or maple syrup, minced garlic, salt, and black pepper until well combined.
Pour the dressing over the vegetables and gently toss until evenly coated.
Refrigerate the salad for 10 to 15 minutes to allow the flavors to meld.
Sprinkle with toasted sunflower seeds or sliced almonds just before serving.
Serve chilled or at cool room temperature.
