Spinach Pizzadilla is a quick and delicious fusion of pizza and quesadilla featuring crispy tortillas, gooey melted cheese, fresh spinach, and savory pizza sauce. Perfect for lunch, dinner, or a satisfying snack, this easy recipe comes together in minutes.

Ingredients

  • Large flour tortillas
  • Fresh spinach, roughly chopped
  • Mozzarella cheese, shredded
  • Parmesan cheese, grated
  • Pizza sauce
  • Olive oil or butter
  • Italian seasoning
  • Garlic powder
  • Red pepper flakes (optional)
  • Black olives, sliced (optional)
  • Mushrooms, sliced (optional)
  • Pepperoni or cooked chicken (optional)

Instructions

  1. Heat a large nonstick skillet over medium heat.
  2. Lightly brush one side of each tortilla with olive oil or butter.
  3. Place one tortilla in the skillet with the oiled side facing down.
  4. Spread a thin layer of pizza sauce over the tortilla.
  5. Sprinkle half of the mozzarella cheese evenly over the sauce.
  6. Add the chopped spinach and any optional toppings.
  7. Sprinkle with Parmesan cheese, Italian seasoning, garlic powder, and red pepper flakes if using.
  8. Top with the remaining mozzarella cheese and place the second tortilla on top with the oiled side facing up.
  9. Cook for 3–4 minutes until the bottom tortilla is golden and crisp.
  10. Carefully flip the pizzadilla and cook for another 3–4 minutes until the second side is golden and the cheese is fully melted.
  11. Let cool for 1–2 minutes, then slice into wedges and serve with extra pizza sauce for dipping.

  • Frozen spinach may be used if thawed and thoroughly squeezed dry.
  • Customize with vegetables such as mushrooms, peppers, onions, olives, or artichokes.
  • Use grilled chicken, turkey, or pepperoni for additional protein.
