This Spinach, Grapefruit, and Avocado Salad is a refreshing and vibrant dish that combines the peppery freshness of spinach with the creamy richness of avocado and the sweet-tart brightness of grapefruit. The mix of textures and flavors is beautifully balanced, making it a perfect salad for a light lunch, a side dish, or a healthy addition to your dinner table.

Ingredients

  1. 4 cups fresh spinach, washed and dried
    1 grapefruit, peeled and segmented
    1 ripe avocado, sliced
¼ cup red onion, thinly sliced (optional)
¼ cup walnuts, chopped (optional, for added crunch)
    1 tbsp olive oil
1 tbsp fresh lime juice (or lemon juice)
1 tsp honey or maple syrup (optional, for sweetness)
    Salt and pepper, to taste

Instructions

Prepare the grapefruit: Peel the grapefruit and cut it into segments by slicing away the membrane between the segments with a sharp knife. Alternatively, you can use a serrated knife to carefully cut away the skin and pith, then slice the fruit into rounds or wedges.

  1. Prepare the avocado: Cut the avocado in half, remove the pit, and carefully scoop out the flesh. Slice the avocado into thin wedges.
  2. Assemble the salad: In a large bowl, combine the fresh spinach, grapefruit segments, and avocado slices. If using, add the thinly sliced red onion and chopped walnuts for extra texture and flavor.
  3. Make the dressing: In a small bowl, whisk together the olive oil, lime juice, honey (or maple syrup), and a pinch of salt and pepper. Taste and adjust the seasoning, adding more lime juice or sweetener as needed.
  4. Toss the salad: Drizzle the dressing over the salad and gently toss to combine, making sure all the ingredients are evenly coated.
  5. Serve: Serve immediately as a light lunch, side dish, or a refreshing starter for dinner. Enjoy the freshness and vibrant flavors!

Notes

  • Add protein: For a more filling meal, you can add grilled chicken, shrimp, or chickpeas to the salad for extra protein.
  • Different nuts: Instead of walnuts, you can use pecans, almonds, or sunflower seeds for a different crunch and flavor.
  • Cheese: Crumbled feta cheese, goat cheese, or a sprinkle of parmesan would add a tangy or savory element to the salad.
  • Herbs: Fresh herbs like cilantro or mint can be added to the salad for extra fragrance and flavor.
