Ingredients

  • Round cob loaf (sourdough or crusty bread)
  • Frozen chopped spinach, thawed and well-drained
  • Cream cheese, softened
  • Sour cream
  • Mayonnaise
  • French onion soup mix
  • Mozzarella cheese, shredded
  • Parmesan cheese, grated
  • Green onions, finely sliced
  • Garlic powder
  • Freshly ground black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Slice the top off the cob loaf and carefully hollow out the center, leaving a sturdy shell. Tear the removed bread into bite-sized pieces.
  3. Squeeze as much moisture as possible from the thawed spinach.
  4. In a large bowl, combine the cream cheese, sour cream, mayonnaise, French onion soup mix, mozzarella, Parmesan, spinach, green onions, garlic powder, and black pepper until smooth.
  5. Spoon the mixture into the hollowed bread bowl and place it on a baking tray.
  6. Arrange the reserved bread pieces around the loaf.
  7. Bake for 25 to 30 minutes, or until the dip is hot, bubbly, and the bread is lightly toasted.
  8. Serve immediately with the toasted bread pieces and fresh vegetables if desired.
