Spinach Feta Breakfast Casserole is a hearty, protein-packed breakfast bake featuring fluffy eggs, tender spinach, tangy feta cheese, and savory seasonings. Perfect for meal prep, brunch, or busy mornings, it’s flavorful, satisfying, and easy to customize.

Ingredients

  • Large eggs
  • Milk or half-and-half
  • Fresh spinach, chopped
  • Feta cheese, crumbled
  • Onion, finely diced
  • Garlic, minced
  • Olive oil
  • Shredded mozzarella or cheddar cheese (optional)
  • Salt
  • Black pepper
  • Dried oregano
  • Fresh parsley or chives, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Heat the olive oil in a skillet over medium heat and sauté the onion until softened.
  3. Add the garlic and cook for about 30 seconds until fragrant.
  4. Stir in the spinach and cook until just wilted, then remove from the heat.
  5. In a large bowl, whisk together the eggs, milk, salt, black pepper, and dried oregano.
  6. Fold the cooked spinach mixture into the egg mixture.
  7. Stir in the crumbled feta and shredded mozzarella or cheddar if using.
  8. Pour the mixture into the prepared baking dish and spread evenly.
  9. Bake for 30–35 minutes, or until the center is set and the top is lightly golden.
  10. Let the casserole rest for 5–10 minutes before slicing.
  11. Garnish with fresh parsley or chives and serve warm.

  • Frozen spinach may be used if thawed and excess moisture is squeezed out.
  • Prepare the casserole the night before and refrigerate until ready to bake.
