Ingredients

  • 4 cups fresh spinach
  • 1 cup fresh blueberries
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup crumbled goat cheese or feta cheese
  • 1/4 cup toasted pecans or walnuts
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar or lemon juice
  • 1 teaspoon honey or maple syrup
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. In a large bowl, combine the fresh spinach, blueberries, and thinly sliced red onion.
