Spinach Artichoke Pasta Salad is a fresh and creamy side dish inspired by the classic spinach artichoke dip. Made with tender pasta, fresh spinach, marinated artichokes, and a tangy homemade dressing, it’s perfect for potlucks, picnics, meal prep, or light lunches.

Ingredients

  • Short pasta (rotini, penne, or bow tie)
  • Fresh baby spinach, roughly chopped
  • Artichoke hearts, drained and chopped
  • Cherry tomatoes, halved
  • Red onion, finely diced
  • Parmesan cheese, grated
  • Mozzarella pearls or diced mozzarella (optional)
  • Mayonnaise
  • Greek yogurt or sour cream
  • Olive oil
  • Lemon juice
  • Dijon mustard
  • Garlic, minced
  • Italian seasoning
  • Salt
  • Black pepper
  • Crushed red pepper flakes (optional)

Instructions

  1. Cook the pasta according to the package directions until al dente.
  2. Drain the pasta, rinse under cold water to stop the cooking process, and drain well.
  3. In a large mixing bowl, combine the cooled pasta, spinach, chopped artichoke hearts, cherry tomatoes, red onion, Parmesan cheese, and mozzarella if using.
  4. In a separate bowl, whisk together the mayonnaise, Greek yogurt or sour cream, olive oil, lemon juice, Dijon mustard, garlic, Italian seasoning, salt, black pepper, and crushed red pepper flakes if using.
  5. Pour the dressing over the pasta mixture and toss until everything is evenly coated.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to develop.
  7. Toss gently before serving and garnish with additional Parmesan cheese if desired.

Notes

  • Fresh spinach provides the best texture, but well-drained thawed frozen spinach can be substituted.
  • Marinated artichoke hearts add extra flavor; drain them well before using.
  • Add grilled chicken, shrimp, chickpeas, olives, roasted red peppers, cucumbers, or feta cheese for delicious variations.
  • Use all Greek yogurt instead of mayonnaise for a lighter dressing.
  • Store in an airtight container in the refrigerator for up to 4 days. Stir before serving and refresh with a splash of lemon juice or olive oil if needed.
  • This salad is best served chilled and is not recommended for freezing.
