Spinach and Ricotta Puff Pastry Pinwheels are flaky, golden bites filled with creamy ricotta, Parmesan, and seasoned spinach wrapped in buttery puff pastry. These savory pinwheels are perfect for appetizers, brunches, lunchboxes, or party platters.

Ingredients

  • 1 sheet puff pastry, thawed
  • 1 cup ricotta cheese
  • 2 cups fresh spinach
  • 1/3 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp Italian seasoning or dried herbs
  • Optional red pepper flakes
  • Flour for dusting

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat and sauté the garlic for about 1 minute.
  3. Add the spinach and cook until wilted. Remove from heat and let cool slightly.
  4. In a bowl, combine the ricotta cheese, Parmesan cheese, cooked spinach, salt, black pepper, and Italian seasoning.
  5. Lightly flour a surface and roll out the puff pastry sheet slightly.
  6. Spread the spinach and ricotta mixture evenly over the pastry.
  7. Starting from one edge, tightly roll the pastry into a log.
  8. Chill the rolled pastry for 10–15 minutes to make slicing easier.
  9. Slice the log into even pinwheels and place them on the prepared baking sheet.
  10. Beat the egg and brush it lightly over the tops of the pinwheels.
  11. Bake for 18–22 minutes or until golden brown and puffed.
  12. Allow to cool slightly before serving.

Notes

  • Frozen spinach can be used, but be sure to thaw and squeeze out excess moisture first.
  • Chilling the rolled pastry before slicing helps the pinwheels keep their shape.
  • Add feta cheese, goat cheese, or sun-dried tomatoes for extra flavor.
  • Serve with marinara sauce, garlic aioli, or herbed yogurt dip.
  • Store leftovers in the refrigerator for up to 4 days and reheat in the oven for best texture.
  • These pinwheels freeze well both before and after baking.
