Spinach and Feta Galettes are rustic, free-form savory pastries filled with tender spinach, tangy feta cheese, and aromatic herbs wrapped in a flaky, buttery crust. These elegant yet simple galettes are perfect for brunch, lunch, light dinners, or entertaining.

Ingredients

  • Pie dough or puff pastry
  • Fresh spinach, chopped
  • Feta cheese, crumbled
  • Ricotta cheese
  • Parmesan cheese, grated
  • Egg
  • Onion, finely chopped
  • Garlic, minced
  • Olive oil
  • Fresh dill or parsley, chopped
  • Dried oregano
  • Salt
  • Black pepper
  • Egg wash (1 egg beaten with 1 tablespoon water)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Heat the olive oil in a skillet over medium heat and sauté the onion until softened.
  3. Add the garlic and cook for about 30 seconds, then stir in the spinach and cook until wilted. Remove from the heat and let cool slightly.
  4. In a bowl, combine the spinach mixture with the feta, ricotta, Parmesan, egg, dill or parsley, oregano, salt, and black pepper.
  5. Roll out the pastry and divide it into individual circles or leave it as one large round.
  6. Spoon the filling into the center of each pastry, leaving a 2-inch border around the edges.
  7. Fold the pastry edges over the filling, pleating as needed while leaving the center exposed.
  8. Brush the pastry edges with the egg wash.
  9. Bake for 30–35 minutes, or until the crust is golden brown and crisp.
  10. Allow the galettes to cool for a few minutes before serving.

Notes

  • Frozen spinach may be used if thawed and thoroughly drained.
  • Puff pastry creates a lighter, flakier crust, while pie dough offers a classic rustic texture.
  • Add sun-dried tomatoes, olives, mushrooms, zucchini, or roasted red peppers for extra flavor.
  • Ricotta can be replaced with goat cheese or cottage cheese if desired.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze baked galettes for up to 2 months.
  • Reheat in a 350°F (175°C) oven or air fryer to restore the crisp pastry.
