Spicy Potato Noodles are chewy and satisfying noodles coated in a bold, savory sauce made with garlic, chili oil, and flavorful seasonings. This quick and comforting dish delivers the perfect balance of heat, texture, and rich flavor for an easy meal.

Ingredients

  • 14 ounces potato noodles or potato starch noodles
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon chili oil
  • 1 teaspoon chili flakes
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 2 green onions, sliced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Bring a large pot of water to a boil and cook the potato noodles according to package instructions.
  2. Drain the noodles and rinse briefly with cool water to prevent sticking.
  3. Heat vegetable oil in a large skillet or wok over medium heat.
  4. Add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Stir in the soy sauce, chili oil, chili flakes, sesame oil, rice vinegar, sugar, and black pepper.
  6. Add the cooked potato noodles to the skillet and toss thoroughly to coat them evenly in the sauce.
  7. Cook for 2 to 3 minutes while stirring frequently so the noodles absorb the flavors.
  8. Remove from heat and garnish with sliced green onions and toasted sesame seeds.
  9. Serve hot and enjoy immediately.
