Spicy Peanut Butter Noodles are a quick, creamy, and flavor-packed meal featuring tender noodles tossed in a rich peanut sauce with the perfect balance of spicy, savory, sweet, and tangy flavors. Ideal for busy weeknights, meal prep, or satisfying lunches.

Ingredients

  • Spaghetti, ramen noodles, rice noodles, or udon noodles
  • Creamy peanut butter
  • Soy sauce
  • Sesame oil
  • Rice vinegar
  • Honey or brown sugar
  • Sriracha or chili garlic sauce
  • Garlic, minced
  • Fresh ginger, grated
  • Warm water
  • Crushed red pepper flakes (optional)
  • Green onions, sliced
  • Chopped peanuts
  • Sesame seeds
  • Fresh cilantro (optional)
  • Lime wedges, for serving

Instructions

  1. Cook the noodles according to the package directions until tender. Drain and set aside.
  2. In a medium bowl, whisk together the peanut butter, soy sauce, sesame oil, rice vinegar, honey, Sriracha, garlic, ginger, and warm water until smooth.
  3. Add more warm water, one tablespoon at a time, if needed to reach your desired sauce consistency.
  4. Toss the cooked noodles with the peanut sauce until evenly coated.
  5. If desired, warm the noodles and sauce together in a skillet over low heat for 1–2 minutes.
  6. Garnish with sliced green onions, chopped peanuts, sesame seeds, and fresh cilantro if using.
  7. Serve with lime wedges for squeezing over the noodles.

  • Use tamari and gluten-free noodles for a gluten-free version.
  • Replace honey with maple syrup for a vegan option.
  • Add grilled chicken, shrimp, tofu, or edamame for extra protein.
