Spicy Baked Salmon Sushi Muffins are a fun, bite-sized twist on traditional sushi, featuring seasoned sushi rice, tender spicy salmon, and crispy nori. They’re easy to prepare, perfect for meal prep or entertaining, and packed with bold Japanese-inspired flavors.

Ingredients

  • 2 cups cooked sushi rice
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 2 tbsp furikake seasoning
  • 3 nori sheets, cut into squares
  • 12 oz fresh salmon, cubed or flaked
  • 1/4 cup Japanese mayonnaise (Kewpie)
  • 2 tbsp sriracha
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 oz cream cheese, softened
  • 2 green onions, sliced
  • 1 tbsp sesame seeds
  • 1 avocado, diced
  • 1 tbsp lime juice
  • Extra spicy mayo for serving (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a 12-cup muffin tin.
  2. Season the cooked sushi rice with rice vinegar, sugar, salt, and furikake seasoning, mixing until evenly combined.
  3. Press a square of nori into each muffin cup.
  4. Divide the seasoned rice among the cups, pressing gently to create a firm base.
  5. In a bowl, combine the salmon, Japanese mayonnaise, sriracha, soy sauce, sesame oil, cream cheese, green onions, and sesame seeds.
  6. Spoon the salmon mixture evenly over the rice in each muffin cup.
  7. Bake for 12 to 15 minutes, or until the salmon is cooked through and lightly golden.
  8. Toss the diced avocado with lime juice while the muffins bake.
  9. Top each sushi muffin with avocado and drizzle with extra spicy mayo or additional sriracha before serving.

  • Use sushi rice for the best texture and structure.
  • Canned salmon can be substituted for fresh salmon if needed.
  • For a gluten-free version, use tamari instead of soy sauce.
