Instructions
Preheat the oven to 350°F (175°C). Grease an 8-inch round springform pan and line the bottom with parchment paper.
Whisk the flour, cocoa powder, granulated sugar, baking powder, baking soda, salt, cinnamon, cardamom, and ginger together in a large mixing bowl until evenly combined.
Add the egg, whole milk, vegetable oil, vanilla extract, and orange zest. Whisk until smooth, then gradually stir in the hot coffee. The batter will be relatively thin.
Pour the batter into the prepared pan and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs. Allow the cake to cool completely in the pan.
Place the finely chopped chocolate in a heatproof bowl. Heat 1/2 cup of the heavy whipping cream until steaming but not boiling, then pour it over the chocolate. Let stand for about 2 minutes before stirring until completely smooth.
Stir the orange zest, fresh orange juice, cinnamon, vanilla extract, and salt into the melted chocolate. Allow the mixture to cool close to room temperature while remaining fluid.
Whip the remaining 1 cup heavy whipping cream with 2 tablespoons granulated sugar until soft-to-medium peaks form.
Gently fold approximately one-third of the whipped cream into the chocolate mixture to lighten it. Fold in the remaining whipped cream in two additions, working gently to retain as much air as possible.
Leave the completely cooled chocolate cake in the springform pan and spread the orange chocolate mousse evenly over the surface. Smooth the top, cover, and refrigerate for at least 4 hours or preferably overnight.
Once the mousse is firmly set, carefully remove the sides of the springform pan. Decorate with chocolate curls or grated chocolate, fresh orange zest, optional thin orange slices, or lightly whipped cream.
Serve slightly chilled. For clean slices, dip a sharp knife in hot water, wipe it dry, and repeat between cuts.
Notes
Allow the cake base to cool completely before adding the mousse so residual heat does not soften it.
Let the melted chocolate mixture cool close to room temperature before folding in the whipped cream.
Use good-quality dark or semisweet chocolate containing approximately 55% to 70% cocoa for a balanced mousse.
For a more intensely spiced cake, add a small pinch of ground cloves or nutmeg.
For an adult variation, replace some of the orange juice in the mousse with orange liqueur.
The hot coffee can be replaced with the same quantity of hot water.
Prepare the assembled cake a day ahead and refrigerate overnight for a firmly set mousse and well-developed flavor.
Store leftovers covered in the refrigerator for 3 to 4 days.
Do not reheat the cake. Let individual slices stand at room temperature for 10 to 15 minutes for a softer mousse texture.
Individual slices can be frozen in airtight containers for up to 1 month and thawed overnight in the refrigerator.
