Spanish Garlic Chicken, or Pollo al Ajillo, is a rustic dish featuring tender chicken cooked in a fragrant garlic, olive oil, and white wine sauce. It’s simple, bold, and full of comforting flavor.

Ingredients

  • Chicken pieces (bone-in or boneless)
  • Olive oil
  • Garlic cloves, sliced or whole
  • Dry white wine
  • Bay leaves
  • Paprika (sweet or smoked)
  • Fresh parsley, chopped
  • Salt and pepper

Instructions

  1. Season the chicken with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the chicken and cook until golden brown on all sides, then remove and set aside.
  4. In the same pan, cook the garlic gently until fragrant and lightly golden.
  5. Add white wine and bay leaves, and let it simmer for a few minutes.
  6. Return the chicken to the pan and cook for 15–20 minutes until tender and fully cooked.
  7. Spoon the sauce over the chicken as it cooks.
  8. Garnish with fresh parsley and serve warm.

  • Use chicken broth instead of wine if preferred.
