Southern Green Beans are a classic comfort food side dish made with tender green beans, smoky bacon, and a rich, savory broth. Slow-simmered until full of flavor, they pair perfectly with family dinners, holiday meals, and Southern favorites.

Ingredients

  • 2 lbs fresh green beans, trimmed
  • 6 slices bacon, chopped
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 cups chicken broth
  • 2 tbsp butter
  • 1 tsp salt, or to taste
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes (optional)
  • 1 tsp brown sugar (optional)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Cook the chopped bacon in a large pot over medium heat until crispy. Remove the bacon with a slotted spoon, leaving about 1 tablespoon of bacon fat in the pot.
  2. Add the diced onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the trimmed green beans and stir to coat them in the flavorful mixture.
  5. Pour in the chicken broth and add the butter.
  6. Season with salt, black pepper, smoked paprika, and red pepper flakes if using.
  7. Cover and simmer for 35 to 40 minutes, or until the green beans are tender.
  8. Stir the cooked bacon back into the pot and add the brown sugar if desired.
  9. Garnish with fresh parsley and serve warm.

Notes

  • Substitute smoked turkey, diced ham, or smoked sausage for the bacon if desired.
  • For a vegetarian version, use vegetable broth and omit the bacon.
  • Add sautéed mushrooms or caramelized onions for extra flavor.
  • Canned or frozen green beans can be used; reduce the cooking time accordingly.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze for up to 3 months and thaw overnight before reheating.
  • Add a splash of broth or water when reheating if the beans seem dry.
