Sourdough French Toast Casserole is a comforting make-ahead breakfast made with hearty sourdough bread soaked in a sweet cinnamon-vanilla custard and baked until golden brown. With a crisp buttery top and soft custardy center, it’s perfect for holiday mornings, brunches, or family breakfasts.

Ingredients

  • 1 loaf sourdough bread, cut into cubes
  • 8 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 2 tbsp unsalted butter, melted
  • 1/2 cup all-purpose flour (optional streusel)
  • 1/3 cup brown sugar (optional streusel)
  • 1 tsp ground cinnamon (optional streusel)
  • 1/4 cup cold unsalted butter, cubed (optional streusel)
  • 1/2 cup chopped pecans or walnuts (optional)
  • Maple syrup, for serving
  • Powdered sugar, for serving
  • Fresh berries, for serving
  • Whipped cream, for serving

Instructions

  1. Grease a 9×13-inch baking dish with butter and spread the cubed sourdough bread evenly inside.
  2. In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg, salt, and melted butter until well combined.
  3. Pour the custard evenly over the bread cubes, gently pressing the bread so it absorbs the liquid.
  4. Cover and refrigerate for at least 4 hours or overnight.
  5. Preheat the oven to 350°F (175°C).
  6. If using the streusel topping, combine the flour, brown sugar, cinnamon, and cold butter until crumbly, then stir in the chopped nuts if desired.
  7. Sprinkle the streusel evenly over the casserole.
  8. Bake for 45–50 minutes, or until the center is set and the top is golden brown.
  9. Let the casserole rest for 10 minutes before serving.
  10. Dust with powdered sugar and serve with maple syrup, fresh berries, or whipped cream.
