Ingredients

  • 4 cups all-purpose flour
  • 1 1/2 cups warm water
  • 2 1/4 teaspoons active dry yeast
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 2 tablespoons melted butter
  • 1/3 cup baking soda
  • 1 egg, beaten
  • Coarse salt for topping
  • Cheese sauce or mustard for serving

Instructions

  1. In a large bowl, combine the warm water, yeast, and brown sugar. Let sit for 5 to 10 minutes until foamy.
  2. Add the flour, salt, and melted butter and mix until a soft dough forms.
  3. Knead the dough for 5 to 7 minutes until smooth and elastic.
  4. Cover the dough and let it rise until doubled in size, about 1 hour.
  5. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  6. Divide the dough into sections and roll each into long ropes.
  7. Cut the ropes into small bite-sized pieces.
  8. Bring a large pot of water to a gentle boil and add the baking soda carefully.
  9. Dip the pretzel bites into the baking soda water for about 20 seconds, then transfer to the prepared baking sheet.
  10. Brush the pretzel bites with beaten egg and sprinkle with coarse salt.
  11. Bake for 12 to 15 minutes, or until golden brown.
  12. Serve warm with cheese sauce or mustard.
