These homemade Soft Pretzel Bites are warm, chewy, golden brown, and finished with coarse salt. Serve them fresh from the oven with cheese sauce, honey mustard, or your favorite dipping sauce.

Ingredients

  • 1 1/2 cups warm water
  • 2 1/4 teaspoons active dry yeast
  • 1 tablespoon granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon salt
  • 4 cups all-purpose flour
  • 1/2 cup baking soda
  • 10 cups water, for the baking soda bath
  • 1 large egg, beaten with 1 tablespoon water
  • Coarse salt or pretzel salt, for topping

Instructions

  1. Combine the warm water, active dry yeast, and granulated sugar in a large mixing bowl. Let sit for about 5 minutes, until the yeast becomes foamy.
  2. Stir in the melted butter and salt. Gradually add the flour, mixing until a soft dough forms.
  3. Knead the dough for 5 to 7 minutes, until smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover, and let rise in a warm place for about 1 hour, or until roughly doubled in size.
  5. Preheat the oven to 425°F (220°C) and line baking sheets with parchment paper.
  6. Divide the risen dough into several portions. Roll each portion into a long rope, then cut the ropes into bite-sized pieces.
  7. Bring 10 cups of water to a boil in a large pot. Carefully add the baking soda.
  8. Working in batches, place the pretzel bites in the baking soda bath for 20 to 30 seconds. Remove with a slotted spoon and arrange on the prepared baking sheets.
  9. Brush the pretzel bites with the egg wash and sprinkle with coarse salt or pretzel salt.
  10. Bake for 12 to 15 minutes, until puffed and deep golden brown.
  11. Let cool for a few minutes, then serve warm with your favorite dipping sauce.

Notes

  • For cinnamon sugar pretzel bites, omit the coarse salt. Brush the baked bites with melted butter and toss with cinnamon and granulated sugar.
  • For extra savory flavor, top with Parmesan, garlic powder, or everything bagel seasoning before baking.
  • For cheesy pretzel bites, add finely shredded cheddar to the dough or sprinkle cheese over the bites near the end of baking.
  • For garlic Parmesan pretzel bites, brush the freshly baked bites with garlic butter and finish with Parmesan and chopped parsley.
  • Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 4 days.
  • Freeze completely cooled pretzel bites in a freezer-safe container for up to 2 months.
  • Reheat in a 350°F (175°C) oven for 5 to 8 minutes for the best texture, or microwave for 15 to 20 seconds for a softer result.
  • Serve with cheese sauce, spicy mustard, honey mustard, ranch, creamy garlic dip, or another favorite dipping sauce.
