Ingredients

  • 2¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon lemon extract (optional)
  • ¼ cup powdered sugar, for rolling (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, lemon juice, lemon zest, and lemon extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until a soft dough forms.
  6. Chill the dough for about 30 minutes if it is too soft to handle.
  7. Scoop tablespoon-sized portions of dough and roll in powdered sugar if desired.
  8. Place the dough balls on the prepared baking sheets about 2 inches apart.
  9. Bake for 10–12 minutes, until the edges are set and the centers remain soft.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
