I love these S’mores Cookies because they combine three of my favorite dessert ingredients in one easy cookie: chocolate, marshmallows, and graham crackers. The graham crackers add a light crunch, the chocolate becomes rich and melty, and the marshmallows create soft, gooey pockets.
