Ingredients
4 cups bread cubes (day-old)
12 oz smoked sausage, sliced
6 large eggs
2 cups milk
1 1/2 cups shredded cheddar cheese
1/2 cup diced onion
1/2 cup diced bell pepper
1 tablespoon butter or oil
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped parsley or chives (optional)
Instructions
Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
In a skillet over medium heat, cook the sliced smoked sausage until browned. Add diced onion and bell pepper and sauté until softened, then remove from heat.
Spread half of the bread cubes in the prepared baking dish. Layer with half of the sausage mixture and some of the shredded cheese. Repeat with remaining bread, sausage, and cheese.
In a large bowl, whisk together the eggs, milk, salt, and black pepper.
Pour the egg mixture evenly over the layered ingredients, pressing down gently so the bread absorbs the liquid.
Let the dish sit for 10–15 minutes, or cover and refrigerate overnight.
Bake uncovered for 40–45 minutes, until the top is golden brown and the center is set.
Allow to cool slightly before slicing and garnish with fresh herbs if desired.
