4 eggs
2 slices bread
2 tablespoons mayonnaise or butter
1 teaspoon mustard (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped chives or green onions (optional)
1/4 teaspoon chili flakes (optional)
Instructions
Place the eggs in a saucepan, cover with water, and bring to a boil.

Transfer eggs to cold water, let cool, then peel.
Place peeled eggs in a bowl and mash with a fork to desired consistency.
Add mayonnaise or butter, mustard if using, salt, and black pepper. Mix until creamy.
Toast the bread slices until golden and crisp.
Spread the smashed egg mixture evenly over the toast.
Sprinkle with chives, green onions, or chili flakes if desired and serve immediately.
Notes
Use soft-boiled eggs for a creamier texture.
Substitute mayonnaise with yogurt or mashed avocado for variation.
Add paprika or hot sauce for extra flavor.
Store egg mixture in the refrigerator for up to 2 days.
