Slow Cooker Queso Spinach Dip is a rich, creamy appetizer loaded with melted cheese, tender spinach, and flavorful seasonings. Made effortlessly in the slow cooker, this crowd-pleasing dip is perfect for parties, game days, and holiday gatherings.

Ingredients

  • Fresh spinach, chopped, or frozen chopped spinach, thawed and well-drained
  • Processed cheese, cubed
  • Cream cheese, softened
  • Shredded Monterey Jack cheese
  • Shredded cheddar cheese
  • Diced tomatoes with green chilies, drained
  • Onion, finely diced
  • Garlic, minced
  • Milk or half-and-half
  • Ground cumin
  • Chili powder
  • Salt
  • Black pepper
  • Fresh cilantro, chopped (optional)

Instructions

  1. If using frozen spinach, thaw it completely and squeeze out as much excess moisture as possible.
  2. Lightly grease the inside of the slow cooker.
  3. Add the processed cheese, cream cheese, Monterey Jack cheese, cheddar cheese, spinach, diced tomatoes with green chilies, onion, garlic, milk, cumin, chili powder, salt, and black pepper to the slow cooker.
  4. Cover and cook on Low for 2–3 hours or on High for 1–1½ hours.
  5. Stir the dip every 30–45 minutes until the cheeses are completely melted and the mixture is smooth.
  6. Taste and adjust the seasoning if needed.
  7. Garnish with chopped cilantro if desired.
  8. Switch the slow cooker to the Warm setting and serve with your favorite dippers.

Notes

  • Frozen spinach works well when thoroughly thawed and drained.
  • Add diced jalapeños, hot sauce, or extra chili powder for more heat.
  • Mix in cooked shredded chicken, browned sausage, black beans, or corn for a heartier dip.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Reheat gently with a splash of milk if needed to restore the creamy consistency.
  • Freezing is not recommended because the cheese sauce may separate after thawing.
