Ingredients

  • 1 1/2 pounds beef sirloin or flank steak, sliced into strips
  • 2 bell peppers, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1/3 cup soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon brown sugar
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil

Instructions

  1. Heat vegetable oil in a skillet over medium-high heat and sear the beef strips for 1 to 2 minutes until browned. Transfer to the slow cooker.
  2. Add bell peppers, onion, and garlic to the slow cooker.
  3. In a bowl, whisk together beef broth, soy sauce, brown sugar, ground ginger, and black pepper.
  4. Pour the sauce over the beef and vegetables.
  5. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the beef is tender.
  6. Mix cornstarch and water to create a slurry, then stir it into the slow cooker during the last 30 minutes to thicken the sauce.
  7. Stir well, adjust seasoning if needed, and serve warm over rice or noodles.
