Slow Cooker Chicken Spaghetti is a creamy, cheesy comfort food made with tender shredded chicken, spaghetti, and a rich, flavorful sauce. This easy crockpot meal is perfect for busy weeknights, meal prep, or feeding a crowd.

Ingredients

  • Boneless, skinless chicken breasts
  • Spaghetti
  • Cream of chicken soup
  • Chicken broth
  • Cream cheese
  • Shredded cheddar cheese
  • Rotel diced tomatoes with green chilies, undrained
  • Yellow onion, diced
  • Garlic, minced
  • Garlic powder
  • Onion powder
  • Italian seasoning
  • Smoked paprika
  • Salt
  • Black pepper
  • Butter
  • Fresh parsley, chopped (optional)

Instructions

  1. Lightly grease the slow cooker with cooking spray or butter.
  2. Place the chicken breasts in the bottom of the slow cooker.
  3. Add the diced onion, minced garlic, cream of chicken soup, chicken broth, Rotel tomatoes with their juices, garlic powder, onion powder, Italian seasoning, smoked paprika, salt, and black pepper.
  4. Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the chicken is tender.
  5. Remove the chicken, shred it with two forks, and return it to the slow cooker.
  6. Stir in the cream cheese until melted and smooth.
  7. Add half of the shredded cheddar cheese and mix well.
  8. Cook the spaghetti separately according to the package directions until al dente, then drain.
  9. Add the cooked spaghetti to the slow cooker and gently toss to coat in the sauce.
  10. Sprinkle the remaining cheddar cheese over the top, cover, and cook for 10–15 minutes until the cheese is melted.
  11. Garnish with fresh parsley if desired and serve warm.

Notes

  • Cook the spaghetti separately to prevent it from becoming mushy.
  • Use rotisserie chicken by adding it during the last 30 minutes of cooking.
  • Add vegetables such as spinach, mushrooms, broccoli, or bell peppers for extra nutrition.
  • Use mild or hot Rotel depending on your preferred spice level.
  • Store leftovers in the refrigerator for up to 4 days.
  • Freeze cooled portions for up to 3 months and thaw overnight before reheating.
