Slow Cooker Balsamic Beef Roast is a tender, flavorful dish where beef chuck roast is slow-cooked with balsamic vinegar and herbs, resulting in juicy, melt-in-your-mouth meat perfect for comforting family dinners.

Ingredients

  1. 3 to 4 pounds beef chuck roast
    1/2 cup balsamic vinegar
    1/4 cup beef broth
    3 cloves garlic, minced
    1 tablespoon olive oil
    1 tablespoon Worcestershire sauce
    1 tablespoon brown sugar
    1 teaspoon dried thyme
    1 teaspoon dried rosemary
    Salt and pepper to taste
    Optional: 1 onion, sliced
    Optional: 2 carrots, chopped

Instructions

Season beef roast generously with salt and pepper.

  1. Heat olive oil in a skillet over medium-high heat. Brown roast on all sides, about 4-5 minutes per side.
  2. In a bowl, whisk balsamic vinegar, beef broth, garlic, Worcestershire sauce, brown sugar, thyme, and rosemary.
  3. Place roast in slow cooker. Add onions and carrots if using. Pour balsamic mixture over roast.
  4. Cover and cook on low for 8-10 hours or on high for 4-6 hours until beef is tender and shreds easily.
  5. Remove roast, slice or shred. Serve with cooking juices spooned over.

Notes

  1. Add potatoes, celery, or mushrooms for a fuller meal.
  2. Spice it up with red pepper flakes or hot sauce.
  3. Use fresh herbs in triple the dried quantity if preferred.
  4. Ensure Worcestershire sauce is gluten-free or omit for gluten sensitivity.
  5. Can substitute part of broth with red wine for deeper flavor.
