Ingredients
3 lb beef sirloin tip roast
2 tbsp olive oil
4 cloves garlic, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 1/2 tsp salt
1 tsp black pepper
1 tsp onion powder
1 tsp paprika
1 tbsp Dijon mustard
Instructions
Preheat oven to 425°F (220°C).
Pat the roast dry with paper towels and place it on a roasting rack in a pan.
In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, pepper, onion powder, paprika, and Dijon mustard.
Rub the herb mixture evenly over the roast.
Roast for 15 minutes to develop a crust.
Reduce oven temperature to 325°F (165°C) and continue roasting for 60–75 minutes until desired doneness is reached.
Remove from oven and let rest for 15–20 minutes.
Slice thinly against the grain and serve.
Notes
Use dried herbs if fresh are unavailable, reducing the quantity slightly.
Let the roast rest before slicing to retain juices.
Add horseradish to the rub for extra flavor.
