Light and flavorful turkey skewers marinated in a savory blend and grilled to perfection, served with a creamy, nutty satay-inspired sauce. A healthier, protein-packed twist on a classic favorite.

Ingredients

  • 1 lb turkey breast, cut into strips or ground turkey
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp honey or light sweetener
  • 1 tbsp olive oil or sesame oil
  • Salt, to taste
  • Black pepper, to taste
  • 1/3 cup peanut butter
  • 1/2 cup coconut milk or water
  • 1 tbsp soy sauce (for sauce)
  • 1 tbsp lime juice (for sauce)
  • 1 tbsp honey or sweetener (for sauce)
  • 1/4 tsp chili flakes or chili paste (optional)
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for 20–30 minutes.
  2. In a bowl, mix garlic, ginger, soy sauce, lime juice, honey, oil, salt, and pepper. Add turkey and marinate for at least 30 minutes.
  3. Thread turkey onto skewers.
  4. Preheat grill or skillet over medium heat and lightly oil if needed.
  5. Cook skewers for 8–10 minutes, turning occasionally, until fully cooked.
  6. In a saucepan, combine peanut butter, coconut milk or water, soy sauce, lime juice, honey, and chili flakes. Heat gently until smooth.
  7. Serve skewers with satay sauce on the side or drizzled over the top.

Notes

  • Use chicken or beef as an alternative to turkey.
  • Substitute almond butter for peanut butter if desired.
  • Add vegetables like bell peppers or onions to skewers.
  • Adjust spice level with more or less chili.
  • Store leftovers for up to 3 days; sauce keeps up to 5 days.
  • Serve with rice or salad for a complete meal.
