Simple Healthy Slaw is a crisp, colorful side dish made with fresh cabbage, carrots, and a light vinaigrette dressing. It’s a refreshing, nutritious accompaniment that’s perfect for barbecues, sandwiches, tacos, burgers, and everyday meals.

Ingredients

  • 4 cups green cabbage, thinly shredded
  • 2 cups red cabbage, thinly shredded
  • 2 cups carrots, shredded
  • 4 green onions, thinly sliced
  • 1/4 cup fresh parsley or cilantro, chopped
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. In a large mixing bowl, combine the shredded green cabbage, red cabbage, carrots, green onions, and chopped parsley or cilantro.
  2. In a small bowl or jar, whisk together the olive oil, apple cider vinegar, lemon juice, Dijon mustard, honey or maple syrup, garlic, salt, and black pepper until smooth.
  3. Pour the dressing over the vegetables.
  4. Toss thoroughly until all of the vegetables are evenly coated.
  5. Refrigerate the slaw for 15-20 minutes to allow the flavors to develop.
  6. Toss again before serving and adjust the seasoning if needed.

Notes

  • Use packaged coleslaw mix for a quick shortcut.
  • Add broccoli slaw, bell peppers, apples, dried cranberries, or snap peas for extra flavor and texture.
  • Mix in sunflower seeds, pumpkin seeds, or sliced almonds for added crunch.
  • Replace honey with maple syrup to make the recipe vegan.
  • The dressing can be made up to 1 week in advance and refrigerated.
  • Store the prepared slaw in an airtight container in the refrigerator for up to 3 days.
  • Serve with grilled chicken, burgers, tacos, barbecue, seafood, or sandwiches.
