This Simple German Potato Salad is a warm, hearty side dish made with tender potatoes tossed in a tangy bacon and vinegar dressing. It’s a comforting classic that pairs perfectly with grilled meats, roasted chicken, and holiday meals.

Ingredients

  • 2 pounds baby potatoes or Yukon Gold potatoes
  • 6 slices bacon, chopped
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon granulated sugar
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil or reserved bacon drippings
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Wash the potatoes and cook them in salted boiling water until fork-tender, about 15 to 20 minutes.
  2. Drain the potatoes, let them cool slightly, and slice them into bite-sized pieces.
  3. Cook the chopped bacon in a large skillet until crispy. Transfer the bacon to a plate and reserve about 1 tablespoon of the bacon drippings.
  4. Cook the chopped onion in the reserved bacon drippings until softened, then stir in the garlic and cook for 1 minute.
  5. Whisk in the apple cider vinegar, Dijon mustard, sugar, and chicken broth. Simmer for 2 to 3 minutes.
  6. Add the sliced potatoes to the skillet and gently toss until evenly coated with the warm dressing.
  7. Stir the crispy bacon back into the salad and season with salt and black pepper to taste.
  8. Sprinkle with fresh parsley and serve warm.
