Sicilian Caponata with Pine Nuts and Green Olives is a classic Italian vegetable dish featuring tender eggplant, tomatoes, celery, olives, capers, and toasted pine nuts in a sweet and tangy sauce. It can be served as an appetizer, side dish, or light meal and tastes even better after the flavors have melded together.

Ingredients

  • Eggplant, diced
  • Olive oil
  • Celery, sliced
  • Onion, chopped
  • Garlic, minced
  • Crushed tomatoes or diced tomatoes
  • Green olives, sliced
  • Capers
  • Pine nuts, toasted
  • Red wine vinegar
  • Granulated sugar or honey
  • Fresh basil or parsley
  • Salt
  • Black pepper

Instructions

  1. Sprinkle the diced eggplant with salt and let it rest for about 30 minutes, then pat it dry.
  2. Heat olive oil in a large skillet and cook the eggplant until lightly browned and tender. Transfer to a plate.
  3. Sauté the onion and celery until softened, then add the garlic and cook briefly until fragrant.
  4. Stir in the crushed or diced tomatoes and cook until the sauce begins to thicken.
  5. Add the green olives, capers, red wine vinegar, and sugar or honey, stirring to combine.
  6. Return the cooked eggplant to the skillet and simmer until the flavors are well blended.
  7. Stir in the toasted pine nuts and fresh basil or parsley just before removing from the heat.
  8. Let the caponata cool slightly before serving warm, at room temperature, or chilled.

Notes

  • For a traditional Sicilian variation, add a handful of raisins.
  • Roasted red peppers or zucchini make excellent additions.
  • Add a pinch of red pepper flakes for a touch of heat.
  • Finish with a drizzle of extra virgin olive oil before serving for extra richness.
  • Store in an airtight container in the refrigerator for up to 5 days.
