Shrimp linguine with saffron sauce combines tender shrimp and silky pasta with a creamy, golden saffron-Parmesan sauce. Bright lemon, garlic, and fresh parsley balance the richness for an elegant dinner ready in about 30 minutes.

Ingredients

  • Linguine pasta
  • Large shrimp, peeled and deveined
  • Saffron threads
  • Heavy cream
  • Dry white wine
  • Pasta cooking water
  • Garlic cloves, minced
  • Shallot, finely chopped
  • Unsalted butter
  • Extra-virgin olive oil
  • Parmesan cheese, freshly grated
  • Fresh lemon juice
  • Lemon zest
  • Salt
  • Freshly ground black pepper
  • Red pepper flakes, optional
  • Fresh parsley, chopped

Instructions

  1. Place the saffron threads in a small bowl with a few tablespoons of warm water. Let them steep for about 10 minutes to release their color, aroma, and flavor.
  2. Bring a large pot of salted water to a boil and cook the linguine until al dente according to the package directions. Reserve about 1 cup of pasta cooking water before draining.
  3. While the pasta cooks, pat the shrimp dry and season lightly with salt and black pepper.
  4. Heat the olive oil and a little butter in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for 1–2 minutes per side, or until pink and opaque.
  5. Transfer the cooked shrimp to a plate to prevent overcooking.
  6. Reduce the heat to medium and add the shallot to the same skillet. Cook for 2–3 minutes until softened, then add the garlic and cook for about 30 seconds.
  7. Pour in the white wine and scrape up the browned bits from the bottom of the skillet. Simmer for a few minutes until slightly reduced.
  8. Add the saffron and its soaking liquid, followed by the heavy cream. Stir and simmer gently until the sauce begins to thicken.
  9. Reduce the heat and stir in the Parmesan. Add reserved pasta water a little at a time as needed to create a smooth, silky sauce.
  10. Add the drained linguine to the skillet and toss thoroughly until coated with the saffron sauce.
  11. Return the shrimp to the skillet and gently toss. Add lemon juice, lemon zest, black pepper, and red pepper flakes, if desired.
  12. Finish with chopped fresh parsley and additional Parmesan. Serve immediately.

Notes

  • Steep the saffron in warm liquid before adding it to the sauce to distribute its color and aroma evenly.
  • For a lighter sauce, reduce the heavy cream and use additional reserved pasta cooking water.
  • White wine can be replaced with seafood stock, chicken broth, or additional pasta water plus extra lemon juice.
  • Scallops, crab meat, or lobster can be added for a more luxurious seafood variation.
  • Cherry tomatoes, baby spinach, asparagus, peas, or zucchini make excellent additions.
  • Frozen shrimp can be used if thawed completely, drained, and patted dry before cooking.
  • Cook the shrimp only until pink and opaque, then return them to the sauce at the end to prevent them from becoming tough.
  • Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently in a skillet with a splash of water, broth, or cream.
  • Freezing is not recommended because the creamy sauce may separate after thawing.
