Ingredients

  • 2 pounds boneless chicken breasts or thighs
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 tortillas
  • 1/4 cup fresh cilantro
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese

Instructions

  1. Place the chicken in a skillet, slow cooker, or Instant Pot.
  2. Season with chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  3. Add the lime juice and a small splash of water or broth.
  4. Cook the chicken until tender and easy to shred.
  5. Remove the chicken and shred it using two forks.
  6. Heat the olive oil in a large skillet over medium-high heat.
  7. Add the sliced bell peppers and onion, cooking until softened and slightly charred.
  8. Return the shredded chicken to the skillet and toss with the vegetables.
  9. Warm the tortillas in a skillet or directly over a flame.
  10. Fill each tortilla with the chicken fajita mixture.
  11. Top with cilantro, avocado, sour cream, and shredded cheese before serving.
