Ingredients

  1. For the crust:

  3. 6 tbsp unsalted butter, melted
  4. Pinch of salt (optional)
  5. For the filling:

  7. 1 cup heavy cream
  8. 2 tbsp unsalted butter
  9. 1 tsp vanilla extract
  10. Pinch of salt
  11. Optional toppings:
  12. Sea salt flakes
  13. Shaved chocolate
  14. Fresh berries
  15. Whipped cream
  16. Crushed nuts

Instructions

  1. Make the crust: Crush cookies or crackers into fine crumbs. Mix with melted butter until well combined. Press mixture evenly into the bottom and sides of a tart pan. Chill for 15–20 minutes.
  2. Prepare the filling: Heat heavy cream in a saucepan over medium heat until just simmering. Pour over chopped chocolate in a bowl and let sit for 1–2 minutes. Stir until smooth. Add butter, vanilla, and salt. Stir until glossy and fully combined.
  3. Assemble the tart: Pour ganache into the chilled crust and smooth the top. Chill for at least 2 hours, or until fully set.
  4. Serve: Top with sea salt, berries, or other garnishes before serving. Slice with a warm knife for clean cuts.
