Shepherd’s Pie is a classic comfort food featuring a savory meat and vegetable filling topped with creamy mashed potatoes and baked until golden brown. This hearty casserole is perfect for family dinners, meal prep, and cozy evenings.

Ingredients

  • 1 lb ground lamb or ground beef
  • 1 tbsp olive oil
  • 1 yellow onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 cup beef or lamb broth
  • 2 tbsp all-purpose flour
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • Salt, to taste
  • Black pepper, to taste
  • 2 lbs Yukon Gold or Russet potatoes, peeled and cubed
  • 4 tbsp unsalted butter
  • 1/2 cup whole milk or heavy cream
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the potatoes in a large pot of salted water, bring to a boil, and cook for 15–20 minutes until fork-tender. Drain and mash with the butter, milk or cream, salt, black pepper, and Parmesan cheese if using. Set aside.
  3. Heat the olive oil in a large skillet over medium heat. Cook the onion, carrots, and celery for 5–7 minutes until softened, then stir in the garlic and cook for 30 seconds.
  4. Add the ground lamb or beef and cook until browned, breaking it into crumbles. Drain excess fat if needed.
  5. Stir in the tomato paste and cook for 1 minute.
  6. Sprinkle the flour over the meat mixture and stir well.
  7. Gradually stir in the broth, Worcestershire sauce, thyme, rosemary, salt, and black pepper. Simmer for 8–10 minutes until thickened.
  8. Stir in the frozen peas.
  9. Transfer the filling to a greased baking dish and spread evenly.
  10. Spoon the mashed potatoes over the filling, smoothing the top and creating ridges with a fork if desired.
  11. Bake for 25–30 minutes until the topping is lightly golden and the filling is bubbling.
  12. Let the Shepherd’s Pie rest for 10 minutes before serving.

Notes

  • Use ground lamb for a traditional Shepherd’s Pie or ground beef for Cottage Pie.
  • Leftover mashed potatoes work well and save preparation time.
  • For a crispier topping, broil for 2–3 minutes at the end of baking while watching carefully.
  • Freeze before or after baking for up to 3 months.
  • Add mushrooms, corn, green beans, or spinach for extra vegetables.
