This sheet pan sesame feta chicken and sweet potatoes is a bold, flavorful one-pan meal with juicy chicken, caramelized sweet potatoes, and a savory sesame glaze. Finished with tangy feta, sesame seeds, and green onions, it is an easy and satisfying dinner for busy nights.

Ingredients

  • 1 1/2 pounds chicken thighs or chicken breasts
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon sesame seeds
  • 2 green onions, sliced

Instructions

  1. Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment paper.
  2. Toss the cubed sweet potatoes with 2 tablespoons olive oil, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and paprika until evenly coated.
  3. Spread the sweet potatoes on the prepared sheet pan in an even layer and roast for 20 minutes, until they begin to soften.
  4. In a bowl, whisk together the soy sauce, sesame oil, honey, garlic, ginger, 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  5. Add the chicken to the bowl and coat it well in the sesame mixture.
  6. Remove the sheet pan from the oven and place the chicken alongside the sweet potatoes.
  7. Return the pan to the oven and roast for 15 to 25 minutes, or until the chicken is fully cooked and the sweet potatoes are tender and caramelized.
  8. During the last 5 minutes of cooking, sprinkle the feta cheese over the pan and allow it to warm slightly.
  9. Remove from the oven and garnish with sesame seeds and sliced green onions before serving.

Notes

  • Chicken thighs stay especially juicy, but chicken breasts also work well.
  • Add broccoli, green beans, or bell peppers for extra vegetables.
  • Goat cheese can be used instead of feta for a different tangy finish.
  • Add chili flakes or sriracha to the marinade for more heat.
  • Butternut squash can be substituted for sweet potatoes.
