Sheet Pan Greek Pita Pizza is a fast, fresh Mediterranean-style pizza made with pita bread, vibrant veggies, and tangy feta cheese. It’s perfect for a quick and healthy meal with minimal cleanup.

Ingredients

  • 4 round pocket-less pita breads
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup fresh spinach or arugula (optional)
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh lemon juice (optional, for serving)

Instructions

  1. Preheat oven to 425°F (220°C). Line a sheet pan with parchment paper.
  2. Place pita bread rounds on the prepared sheet pan.
  3. Brush each pita with olive oil and rub with minced garlic.
  4. Sprinkle a layer of mozzarella cheese on each pita.
  5. Top with cherry tomatoes, sliced olives, red onion, and crumbled feta cheese.
  6. Sprinkle with oregano, salt, and pepper.
  7. Bake for 8–10 minutes, or until the cheese is melted and the pita edges are golden brown.
  8. Optional: Top with fresh spinach or arugula and a squeeze of lemon juice before serving.

  • Use naan as a substitute for pita if preferred.
