Shaved Brussels Sprouts Caesar Salad is a modern twist on the classic Caesar, featuring thinly shaved Brussels sprouts, creamy Caesar dressing, crunchy croutons, and parmesan, offering a refreshing yet hearty flavor.

Ingredients

  1. 4 cups Brussels sprouts, trimmed and thinly shaved
    1/2 cup homemade or store-bought croutons
    1/4 cup parmesan cheese, grated
    1 tablespoon olive oil (for the Brussels sprouts)
    Salt and pepper to taste
    1/2 cup plain Greek yogurt or mayonnaise (for the dressing)
    2 tablespoons lemon juice (for the dressing)
    1 tablespoon Dijon mustard (for the dressing)
    1 tablespoon worcestershire sauce (for the dressing)
    2 cloves garlic, minced (for the dressing)
    1/4 cup parmesan cheese, grated (for the dressing)
    Salt and pepper to taste (for the dressing)

Instructions

Trim the Brussels sprouts and thinly shave them using a sharp knife or mandoline. Place them in a large mixing bowl.

  1. In a small bowl, whisk together the Greek yogurt (or mayonnaise), lemon juice, Dijon mustard, worcestershire sauce, minced garlic, and parmesan cheese. Season with salt and pepper to taste. Adjust consistency with a little water if necessary.
  2. Drizzle the Caesar dressing over the shaved Brussels sprouts and toss well to coat the sprouts evenly.
  3. Top the salad with croutons, additional parmesan, and toss gently again.
  4. Serve immediately as a side dish or light main course.

Notes

  1. For a richer dressing, increase the amount of mayonnaise or Greek yogurt, or add a splash of heavy cream.
  2. If you prefer a vegan version, use a plant-based yogurt and skip the parmesan cheese.
  3. For added crunch, try adding toasted pine nuts or walnuts to the salad.
  4. This salad is best served fresh, as the Brussels sprouts can wilt and the croutons can lose their crunch if stored with the dressing.
