Sesame Khachapuri is a golden, cheese-filled Georgian bread topped with nutty sesame seeds and a gooey, savory center. Perfect for breakfast, brunch, or a comforting snack.

Ingredients

  • all-purpose flour
  • warm milk
  • active dry yeast
  • sugar
  • salt
  • olive oil or butter
  • egg
  • mozzarella cheese
  • feta cheese
  • sesame seeds

Instructions

  1. In a bowl, mix warm milk, sugar, and yeast. Let it sit for 5–10 minutes until foamy.
  2. Add flour, salt, oil, and egg. Knead until a soft dough forms.
  3. Cover and let the dough rise in a warm place for about 1 hour or until doubled in size.
  4. Preheat oven to 200°C (400°F).
  5. Mix mozzarella and feta cheese in a bowl.
  6. Divide dough into portions and roll each into an oval shape.
  7. Place cheese in the center, fold edges inward, and pinch ends to form a boat shape.
  8. Brush edges with egg wash and sprinkle sesame seeds on top.
  9. Bake for 12–15 minutes until golden brown.
  10. Optionally, crack an egg in the center during the last few minutes of baking.

Notes

  • Substitute cheeses like sulguni or cheddar for variation.
  • Add fresh herbs like parsley or dill for extra flavor.
  • Top with butter after baking for a richer taste.
  • Store leftovers in the refrigerator for up to 3 days.
  • Reheat in the oven at 180°C (350°F) for best texture.
