Ingredients

  • Butter
  • Olive oil
  • Onion, diced
  • Celery, diced
  • Carrots, diced
  • Garlic, minced
  • Potatoes, peeled and diced
  • Seafood stock or chicken broth
  • Heavy cream
  • Whole milk
  • Shrimp, peeled and deveined
  • White fish fillets, cut into bite-sized pieces
  • Scallops
  • Clams or mussels (optional)
  • Corn kernels
  • Fresh thyme
  • Bay leaf
  • Salt
  • Black pepper
  • Smoked paprika (optional)
  • Fresh parsley, chopped
  • Bacon, cooked and crumbled (optional)

Instructions

  1. Melt the butter with the olive oil in a large pot over medium heat.
  2. Cook the onion, celery, and carrots until softened.
  3. Stir in the garlic and cook for 1 minute until fragrant.
  4. Add the potatoes, seafood stock or chicken broth, thyme, bay leaf, salt, black pepper, and smoked paprika if using.
  5. Bring to a boil, then reduce the heat and simmer until the potatoes are tender.
  6. Stir in the whole milk and heavy cream, heating gently without bringing the chowder to a full boil.
  7. Add the shrimp, white fish, scallops, and clams or mussels if using.
  8. Cook for 5 to 8 minutes, or until the seafood is just cooked through.
  9. Stir in the corn and cook for an additional 2 to 3 minutes.
  10. Remove the bay leaf, adjust the seasoning, garnish with fresh parsley and crumbled bacon if desired, and serve hot.
