Ingredients

  • 4 salmon fillets (about 5 ounces each)
  • 6 cups mixed salad greens
  • 2 cups fresh strawberries, sliced
  • 1 avocado, sliced
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup sliced almonds
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/3 cup mayonnaise
  • 2 tbsp Greek yogurt
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tbsp poppy seeds
  • Pinch of salt

Instructions

  1. Preheat a skillet or grill pan over medium-high heat.
  2. Brush the salmon fillets with olive oil and season with salt, black pepper, and garlic powder.
  3. Cook the salmon for 4 to 5 minutes per side, or until it flakes easily with a fork.
  4. Remove the salmon from the heat and allow it to cool slightly.
  5. In a small bowl, whisk together the mayonnaise, Greek yogurt, honey, apple cider vinegar, lemon juice, poppy seeds, and a pinch of salt until smooth.
  6. Arrange the mixed greens in a large salad bowl or serving platter.
  7. Top with sliced strawberries, avocado, cucumber, red onion, feta cheese, and almonds.
  8. Place the cooked salmon over the salad.
  9. Drizzle with the poppyseed dressing just before serving.
