Salmon Pasta is a rich and satisfying dish featuring tender, flaky salmon tossed with perfectly cooked pasta in a creamy garlic Parmesan sauce. Finished with fresh herbs and lemon, it is elegant enough for special occasions yet simple enough for a weeknight dinner.

Ingredients

  • Fettuccine, linguine, penne, or pasta of choice
  • Salmon fillets, skin removed
  • Olive oil
  • Unsalted butter
  • Garlic, minced
  • Shallot, finely chopped
  • Heavy cream
  • Chicken broth or vegetable broth
  • Grated Parmesan cheese
  • Lemon juice
  • Lemon zest
  • Fresh parsley or dill, chopped
  • Salt
  • Black pepper
  • Red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente.
  2. Reserve a small amount of the pasta cooking water, then drain the pasta.
  3. Season the salmon with salt and black pepper.
  4. Heat the olive oil and butter in a large skillet and cook the salmon until golden and it flakes easily with a fork.
  5. Transfer the salmon to a plate and gently break it into bite-sized pieces.
  6. Cook the shallot until softened, then stir in the garlic until fragrant.
  7. Pour in the broth and heavy cream, then simmer for a few minutes.
  8. Stir in the Parmesan cheese, lemon juice, and lemon zest until the sauce is smooth.
  9. Add the cooked pasta and a splash of the reserved pasta water, tossing until evenly coated.
  10. Gently fold in the salmon, garnish with fresh parsley or dill, and serve immediately.

Notes

  • Add baby spinach, peas, asparagus, or cherry tomatoes for extra color and nutrition.
  • Use smoked salmon instead of fresh salmon for a deeper savory flavor.
  • For a lighter version, replace part of the heavy cream with milk or use an olive oil and lemon sauce.
  • Capers add a delicious briny contrast.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently with a splash of milk, cream, or broth to restore the creamy texture.
  • Freezing is not recommended, as the cream sauce may separate.
