Salmon Burrito Bowl is a fresh and satisfying meal filled with tender seasoned salmon, fluffy rice, colorful vegetables, and flavorful toppings. Packed with protein and healthy fats, this vibrant bowl is perfect for lunch, dinner, or easy meal prep.

Ingredients

  • 4 salmon fillets
  • 3 cups cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cups shredded lettuce or cabbage
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro
  • 1/2 cup salsa or sauce of choice

Instructions

  1. Season the salmon with olive oil, garlic powder, paprika, cumin, salt, and black pepper.
  2. Cook the salmon in a skillet, oven, or air fryer for 10 to 12 minutes until fully cooked and flaky.
  3. Prepare the rice according to package instructions if not already cooked.
  4. Warm the black beans and corn if desired.
  5. Slice the avocado and chop the vegetables.
  6. Assemble the bowls by adding rice as the base.
  7. Top with black beans, corn, lettuce or cabbage, cherry tomatoes, and avocado.
  8. Add the cooked salmon on top of each bowl.
  9. Drizzle with lime juice and salsa or your favorite sauce.
  10. Garnish with fresh cilantro before serving.

  • Cauliflower rice or quinoa can be used instead of regular rice.
  • Mango salsa, chipotle sauce, or spicy mayo make delicious toppings.
