Saffron-Marinated Lamb Lollipops are tender, juicy lamb chops infused with aromatic saffron, garlic, and citrus. Quickly grilled or seared, they deliver an elegant and flavorful dish perfect for special occasions.

Ingredients

  • Lamb rib chops (lollipops), frenched
  • Olive oil
  • Garlic, minced
  • Lemon juice
  • Saffron threads, soaked in warm water
  • Plain yogurt (optional)
  • Salt and pepper
  • Ground cumin (optional)
  • Fresh parsley or mint (for garnish)

Instructions

  1. Soak saffron threads in warm water for 5–10 minutes to release flavor and color.
  2. In a bowl, combine olive oil, garlic, lemon juice, saffron with its liquid, yogurt if using, salt, pepper, and cumin.
  3. Add the lamb chops and coat thoroughly. Cover and refrigerate for at least 1 hour, preferably up to 8 hours.
  4. Preheat a grill or skillet over medium-high heat.
  5. Cook the lamb lollipops for 3–4 minutes per side for medium-rare, or to desired doneness.
  6. Remove from heat and let rest for a few minutes.
  7. Garnish with fresh herbs and serve warm.
