Ingredients

  • 2 lbs chicken thighs or chicken breasts
  • 4 potatoes, diced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 bay leaf
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: peas
  • Optional: sliced mushrooms
  • Optional: green beans
  • Optional: chopped parsley
  • Optional: 1/4 cup heavy cream

Instructions

  1. Place the potatoes, carrots, celery, onion, and garlic into the slow cooker.
  2. Arrange the chicken on top of the vegetables.
  3. In a bowl, stir together the chicken broth, tomato paste, thyme, rosemary, salt, and black pepper.
  4. Pour the broth mixture into the slow cooker.
  5. Add the bay leaf.
  6. Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours, until the chicken is tender.
  7. Remove the chicken and shred or chop it into bite-sized pieces.
  8. Return the chicken to the slow cooker and stir well.
  9. Add optional vegetables such as peas or green beans during the last 20 minutes of cooking.
  10. Remove the bay leaf before serving.
  11. Garnish with fresh parsley if desired and serve warm.
