Russian Strawberry Compote, or Klubnichny Kompot, is a traditional Eastern European fruit beverage made by gently simmering strawberries with water and sugar. Refreshing, lightly sweet, and beautifully vibrant, it can be enjoyed warm or chilled.

Ingredients

  • 1 pound fresh strawberries, hulled and halved
  • 8 cups water
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice (optional)
  • Fresh strawberry slices for garnish (optional)
  • Mint leaves for garnish (optional)
  • Lemon slices for garnish (optional)

Instructions

  1. Wash, hull, and halve the strawberries.
  2. Pour the water into a large saucepan or pot and bring to a gentle boil over medium-high heat.
  3. Add the strawberries and sugar.
  4. Stir until the sugar dissolves completely.
  5. Reduce the heat to low and simmer gently for 10 to 15 minutes.
  6. Remove the pot from the heat.
  7. Stir in the lemon juice if using.
  8. Allow the compote to cool slightly.
  9. Serve warm or refrigerate until chilled.
  10. Garnish with strawberry slices, mint leaves, or lemon slices if desired.

Notes

  • Frozen strawberries can be used in place of fresh strawberries.
  • Adjust the sugar according to the sweetness of the fruit and personal preference.
  • Add other berries such as raspberries or blueberries for a mixed berry version.
  • Fresh mint can be simmered with the strawberries for extra flavor.
  • Store refrigerated for up to 4 days.
  • The softened strawberries can be enjoyed separately or used as a dessert topping.
