Crispy rosemary garlic roasted potatoes with a golden exterior and fluffy interior, infused with aromatic herbs and savory garlic. A simple and flavorful side dish for any meal.

Ingredients

  • 2 lbs Yukon gold or red potatoes, cut into chunks
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 2 tbsp Parmesan cheese (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wash and cut potatoes into evenly sized chunks.
  3. In a large bowl, toss potatoes with olive oil, garlic, rosemary, salt, and pepper.
  4. Spread potatoes in a single layer on a baking sheet.
  5. Roast for 35-45 minutes, turning halfway through, until golden and crispy.
  6. Sprinkle with paprika or Parmesan during the last few minutes if desired.
  7. Remove from oven and serve hot.
